200 grams of anchovies
1 teaspoon of seasoning
1 tablespoon vinegar
50 grams of rice flour
50 grams tapioca flour
1 teaspoon of baking powder
5 cloves of garlic, thinly sliced
5 lime leaves, sliced
10 pieces of red bird’s eye chili, sliced
teaspoon of seasoning
Enough oil for frying
How to make:
Boil the anchovies with water, seasoning and vinegar for 5 to 7 minutes, then drain.
Prepare a container, then mix the rice flour, tapioca flour, and baking powder. Add the anchovies, then stir until smooth.
Sieve the anchovies until not much flour has accumulated, then fry in hot oil over medium heat.
Fry until a quarter dry then reduce heat and cook for about 15 minutes.
Mix cayenne pepper, garlic and seasoning then coat with flour coating, then put into fried anchovies that are half dry.
Add lime leaves and fry until dry. Season with seasoning to taste.
Crispy anchovies are ready to eat. You can also store it in an airtight container.
