Porang Flour Pancake Recipe, Gluten Free Cake

KOMPAS.com – Porang, which includes long-chain carbohydrates, is suitable for processing into diet foods.

“The porang tubers are separated, then glucomannan is taken. Glucomannan is a long chain,” said Prof. Dr. Edi Santosa, Professor of the Faculty of Agriculture, IPB and Head of the Department of Agronomy and Horticulture, Faperta IPB to Kompas.com, Thursday (12/8/2021).

One of the processed products of porang tubers is flour which can be used as the main ingredient for making cakes.

Ingredients (1 serving)

Dough A

  • 2 egg whites
  • 1 tbsp sugar

B dough

  • 2 egg yolks
  • 3 tbsp water (can be reduced)
  • 1/4 tsp xanthan gum (can be replaced with cornstarch)
  • 1/4 tsp porang flour
  • 2 tbsp rice flour
  • 1 tbsp tapioca flour
  • 3 tbsp red sorghum flour
  • Salt to taste
